Serves about 4
This gnocchi is deliciously flavoured with lots of lemon and garlic and is super-easy and quick to prepare. Feel free to adjust the quantities or add extra ingredients according to your preferences!
What you need:
One packet of gluten free gnocchi (check the serving sizes on the packet – you need enough for four servings)
1 tablespoon of olive oil
4 cloves of garlic, finely minced
Large bunch of rainbow chard/silverbeet, chopped into thin slices
40 grams of sundried tomatoes, finely sliced (weigh after removing from oil, if your’s come in oil)
1 can of chickpeas, drained
Juice of one lemon
Salt and pepper to taste
40 grams of parmesan cheese, finely grated
What to do:
1. Cook the gnocchi according to the instructions on the packet. Once cooked, drain and set aside.
2. While the gnocchi is cooking, heat the olive oil in a large saucepan or wok. Once the oil is hot, add the minced garlic and cook for a few minutes to soften.
3. Add the chopped rainbow chard/silverbeet and sundried tomato to the pan and cook until the rainbow chard/silverbeet is wilted and soft.
4. Add the chickpeas, cooked gnocchi and lemon juice to the pan and stir together with the rainbow chard/silverbeet in the pan to mix thoroughly until everything is very hot.
5. Add salt and pepper to taste.
6. Dish up the gnocchi and top each serving with a quarter of the grated parmesan.
7. Eat immediately and enjoy!
