Tomato and Cheese Gnocchi

GF NF EF

Serves 4

This meal is a regular one in our house when I need something that everyone likes and can be made quickly – it takes about 15 to 20 minutes from start to finish and it gives strong pizza vibes with a rich tomato sauce and melty cheese! If you aren’t gluten free, this should work fine with normal gnocchi.

What you need:

500 gram packet of gluten free gnocchi, cooked in boiling, salted water until just soft, or according to any instructions on the packet

2 tablespoons of mild olive oil

1 onion, finely diced

3 -5 cloves of garlic, peeled and chopped finely (adjust the amount of garlic to suit your preferences)

400 gram tin of chopped tomatoes in juice

60 grams of tomato paste

400 gram tin of chickpeas, drained (it is ok if your tin weighs slightly more or less than 400 grams; this can be substituted for any other ready-to-eat protein you prefer)

2 tablespoons of roughly chopped fresh herbs, such as oregano or basil

Salt and pepper to taste

125 grams of mozzarella cheese

What to do:

1. Heat the oil in a large frying pan over a medium heat

2. Add the finely diced onion and garlic to the oil in the pan and fry until soft, stirring as necessary. I add a bit of water if the onion and garlic starts to burn before it has cooked.

3. Add the cooked gnocchi, chopped tomatoes in juice, tomato paste, chickpeas (or other protein) and chopped herbs, and then add salt and pepper to taste. Keep the heat on under the pan as you mix everything together and until the tomato is bubbling and hot.

4. If your frying pan is not oven-safe, transfer the hot gnocchi and tomato mixture to an oven-safe baking pan. You can keep the mixture in the frying pan if it is oven-safe.

5. Level the mixture in the pan to give a flattish surface for the mozzarella cheese. Grate or slice the mozzarella cheese and distribute evenly across the top of the gnocchi and tomato mixture in the pan.

6. Place the pan under a hot grill for 5 to 7 minutes, or until the mozzarella has melted and is starting to turn brown.

7. Carefully remove the pan from under the grill and serve immediately. I like this with a fresh salad. Fresh bread would also be a great accompaniment.

8. Enjoy!
